Chewy Chocolate Coconut Cookies

An easy to make, delicious treat that is made with real ingredients!

This recipe makes roughly 8 cookies




INGREDIENTS:

  • 1 ½ cups of unsweetened shredded coconut

  • ¾ cup of almond flour

  • ¼ tsp of salt

  • a tsp of baking powder

  • 1/3 cup of mashed banana

  • 1 egg

  • 2 TBSP of unrefined coconut oil (warm to make liquid)

  • 1 tsp of pure vanilla extract

  • ½ cup of dark chocolate chips (look at the ingredients and buy chips without dairy or added fillers)







Preparation:

  • Preheat oven to 350F or180C

  • In a medium sized mixing bowl mix together the shredded coconut, almond flour, baking powder and salt

  • In a separate small mixing bowl, whisk together the egg, mashed banana, coconut oil (cool slightly after warming to become liquid) & vanilla extract

  • Pour the wet ingredients into the dry ingredients and combine

  • Add the chocolate and stir until evenly distributed throughout

  • Divide and shape into 8 cookies with hands

  • Place onto cookie sheet about 1 ½ inches apart

  • Bake for 15 - 20 minutes until golden brown (different ovens require different times for these cookies)

  • Be careful not to overcook them, they go from perfect to burnt really fast

  • Take out of the oven and allow them to firm up for a few minutes on the cookie sheet then transfer to baking rack or a plate to cool

  • Enjoy after they have hardened up but are still warm…YUM!
