Meatball Snacks

I am always trying to find new quick meals or snacks that are super easy. These are great for lunch or when you get home at the end of the day and need a satiating snack.


1 pound of GRASS FED ground meat (I use beef)

Italian Seasoning

Oregano

Sea Salt

Pepper

2 tablespoons Almond Flour

1 Free Range Egg


INSTRUCTIONS:

  • Turn the oven onto 350 degrees F

  • Put the ground meat into a large bowl

  • Cover heavily with Italian seasoning

  • Sprinkle with Oregano

  • Sprinkle with Sea Salt

  • Add the almond flour

  • In a separate bowl, whisk the egg

  • Add egg to meat bowl

  • Take off your jewellery, pull up your sleeves and squish all together with your hands

  • Separate into 6 - 8 meatballs

  • Place onto a baking sheet with parchment paper

  • Bake at 350 F for 15 - 20 minutes

  • Pull out of the oven and use them in a dinner dish or cool and keep in the fridge for lunch tomorrow!

Delicious in a salad or on their own! Use with onions, tomatoes, garlic & zucchini or spaghetti squash for the noodles in a Bolognese… Yum!
