Simply Seared Chicken

You will need:
Cast Iron Pan
2 or 3 Chicken breasts from pasture raised/organic farms
(know your farmers, look them up or go meet them in person)
Ingredients for Marinade: best to do this for a few hours or overnight
Sea Salt
Acidic Juice (lemon juice, vinegar)
Olive Oil
Fresh garlic
Fresh ginger
Maple Syrup
Marinade chicken breasts in acidic juice, salt and seasonings for at least 15 minutes at room temperature. After about 10 minutes flip the chicken in the marinade so it covers the entire piece of meat
Turn oven on to 350 degrees F
Turn cast iron on to medium heat
Add a splash of avocado oil into the pan
When hot add chicken, do not crowd, you want to sear each side until golden brown
When each side is golden brown place cast iron into the oven and cook for 25 minutes - use a timer!
When your timer goes off pull pan out of the oven, slice into the thickest piece of meat to see if it is cooked. When the juice runs clear, or a the internal temperature reaches 165 F, it is cooked.
Allow to rest off the heat for 10 minutes.
Slice and serve.
